Maui Pepper 's Apple Sass™ original recipes

Day-After Turkey Chili

Here's a delicious, spicy alternative to boring turkey leftovers! Prepare this the morning after a big turkey dinner, then keep the crock-pot on low, and you're ready for that friend just dropping by, or a brisk afternoon's warm-up.

3 T Canola oil
1 tsp salt
3 medium garlic cloves...finely chopped
¾ tsp white pepper
2 medium onions...finely chopped
1 pound leftover turkey meat, torn into 1/2-inch pieces (3 cups loosely packed)
1 tsp chili powder
1 T ground cumin
1 cup leftover corn bread stuffing, coarsely crumbled
Or 1 cup corn bread cut into ½-inch cubes and mixed with ½ T ground coriander
2½ cups chicken broth
½ cup dry white wine
¼ cup extra chicken broth
¼ cup tomato paste
½ pound fresh mushrooms, cut into ¼-inch slices
1 T dried leaf oregano
½ T dried rosemary
3-4 T Apple Sass™
1 tsp sugar

In a medium-size saucepan, heat oil over medium heat. Add garlic and onions and sauté until onions are translucent, 2 to 3 minutes. Add chili powder, cumin and coriander and sauté 1 to 2 minutes more. Add broth, wine, tomato paste, Apple Sass , oregano, rosemary, sugar, salt and pepper. Bring to a boil, then reduce heat to low. Add turkey, stuffing and mushrooms. Simmer until thick but still slightly liquid, about 15 minutes. You can serve immediately, or transfer to a crock-pot set on low

Apple Sass™ Cream Cheese Log( makes two, 8 inch logs)

2 8 oz. packages light cream cheese
¼ cup finekt chopped green pepper
1 8 oz. can crushed pinapple, drained
1½ T Apple Sass™ hot sauce
1 tsp seasoned salt
½ cup chopped pecans
1/8 tsp garlic salt
1/8 tsp celery salt
1 tsp dried cilantro
½ - 1 cup finely chopped pecans

Blend all ingredients except finely chopped pecans. Mix well. Shape into two 8 inch logs and roll in finely chopped pecans. Wrap first in wax paper, then foil; chill overnight. Serve with Triscuits or Wheat Thins.
